The chemicals in raisins help prevent tooth decay. The process of tooth decay involves bacteria breaking down the microbial biofilm called plaque that forms around teeth after eating. When broken down it becomes acids, which erode the tooth enamel and bring about cavities. The oleanolic acid and oleanolic aldehyde in raisins inhibit the growth the Streptococcus mutans bacteria which cause cavities. They also reduce the growth of Porphyromonas gingivalis which is responsible for periodontal disease.
